Do you know Hoba Sushi?

Sushi comes in all shapes and forms, but there are of course some that we are all more familiar with. Sushi with a piece of fish on top, sushi rolled up in a sheet of nori, for example.

Recently I was given some hoba sushi, and that was my first time seeing it as well. This is a specialty in the Northern Gifu area. The sushi were individually wrapped by these large pieces of leafs that were giving the rice more flavour.

When I opened one, each flattened sushi had a slice of egg, a slice of saba, tuna, and some red ginger too. Rather than the standard sushi, this reminded me more of chirashi sushi.
