Tsukemen loaded with umami
Just north of the "Golden Gai" dining street, I found this relatively new ramen shop, Oto, which is a branch of a ramen shop based in Tokyo's Senju area. The space accommodates about eight diners, so don't expect to seat a crowd here. I ordered the special tsukemen and wasn't disappointed - tender noodles, creamy ramen egg, menma, greens for garnish, and a big chunk, not slice, of chashu. The chashu was a little dry but flavorful. The dipping broth is loaded with umami, long onion and pork bits, and not too fatty. The chefs will warm up your broth on request.
