Ramen Marukiya is a cash-only restaurant located in Niigata City's Nishi Ward, and they specialize in thin noodles and a simple, mild tasting soup base with their ramen. They advise that because the noodles are thin, they can't boil a ton of them at any one time so there might be a wait on your food -- but I didn't find it to be any longer than any other ramen establishment I've visited. Their signature ramen is only 700 yen which I think is pretty reasonable. They have some other variants, too, like a spicy ramen which is a touch more expensive at 850 yen. During summer they also have cold noodle dishes if you'd prefer! The actual restaurant vibe is fairly simple, with a log cabin kinda feel. If you do plan on visiting, keep in mind that they are closed every Wednesday.
