Tonkatsu Ramen
Tatsu no ya was recommended for tonkotsu or pork bone broth ramen with thin noodles, the local specialty of Kurume and Fukuoka Prefecture. It didn't disappoint, with two tastes (strong and mild, the strong mostly being saltier), both had the deep tonkotsu flavor we were hoping for. The perfectly tender cha siu and kombu toppings would have been fine, but I got mine with an egg, also perfectly cooked. We opted for a side of 'yaki-meishi,' the local way of saying cha-han, or fried rice. There are also toppings in jars on the table: bean sprouts, mountain vegetables, and ginger. The restaurant has tons of bar seating if you're alone, a couple family tables, and about four tables for couples. Service is fast and professional.
