Weekend-only handmade soba

Ueda Soba is a great place to get a quality handmade soba noodle fix, but there is one downside -- the store is only open on weekends, and for fairly limited operating hours (11am until 3pm) each day. It's located in an area that gets a lot of snow in winter, so I'm not sure if those hours extend more in their peak season. Nonetheless, the food is solid, and they also have other things like tempura and curry rice on the menu.
