Sanpou Kitchen at Niigata's CocoLo shopping complex is very reminiscent of cold bar deli counters in my home country. You can pick and mix from their wide variety of offerings, including things like chicken and veggie stir fry and sweet and sour pork, and you pay for each thing per 100 grams. The downside is that you quickly rack up a pricey meal if you pick a few options, so keep that in mind!
