Not just cakes

Patisserie Ravi is a great spot in the Tsubame area of Niigata to pick up some cake, and they have a variety of options to choose from on any given day. They also do boxed, omiyage style treats that you can grab to-go, like financiers. One thing I'd highly recommend here which isn't a cake is their Echigohime smoothie, made using local Echigohime strawberries. It might seem pricey at 700 yen, but the taste is out of this world and I'd 100% rather buy a smoothie made with local ingredients than a frappe from somewhere like Starbucks for the same price. The store is easily walkable from Kita-Yoshida Station, and if you're driving there is plenty of parking surrounding the building.
